Cayman Spirits Company distills its own spirits, right here in the Cayman Islands. Its distillation with a Cayman distinctiveness, and lots of the company’s drinks, which were on display at the recent CIBA Expo, were named after Cayman places or people or things. “We are the first rum distillers on the island, and we produce everything from Seven Fathoms Rum to Governor’s Reserve Rum,” said Cayman Spirts’ Event Manager, Sarita Singh.
“The story behind Seven Fathoms is we age them in barrels, 42 feet deep which is seven fathoms, and this makes our rum very unique. Very few people do this method of aging. Our newest product is a rum and cola in a can, which has become really popular, we launched it at Kaaboo and we sold out a hundred cases.
“Gun Bay Vodka named after Gun Bay – we do a lot of local names for all of our products,” Ms. Singh continued, we also have dark rum, spiced rum, coconut rum, white rum, and gold rum,” she said. “Governors Reserve is our coconut rum, and we use young local Caymanian coconuts. So everything is fresh and there is no preservatives. Oh, and we have banana rum as well,” Ms. Singh explained.
The company hopes to source more produce used to add flavor to the rum from local sources: “We do distillers’ specials every so often depending on what is in season. We will go to the farmers market and team up with a farmer. The last one we did was a mango brandy. So we went to farmer Clarence and we got about 500 pounds of mango to make a mango brandy,” she said “It was sold out in two weeks.”
